Flakely Gluten Free is set to leave its production kitchen in Manayunk behind and relocate to a new storefront in the heart of Bryn Mawr, with plans to open its doors in early February.
Founded by Lila Colello after she was diagnosed with celiac disease in 2011, Flakely has been making waves in the region with its innovative approach to gluten-free baking. The bakery is known for its "pastry ATMs" β smart freezers that dispense a variety of frozen goods 24/7 β and will be taking over a 1,400-square-foot space at 1007 Lancaster Ave.
For four years, Flakely had called Krams Street home, where Colello would prepare her sweets and sell them from a takeout window with limited hours. However, the bakery's growth has outpaced its current location, and it's time to move on to bigger and better things.
The new Bryn Mawr storefront will serve up pastries, bagels, and French-style breads, in addition to offering classes, pop-up dinners, and gluten-free baking collaborations. Colello's vision for the bakery is simple: "We deserve better than just being 'good for gluten free.'" She aims to create items that rival their wheat flour counterparts in taste and texture.
Flakely has already made a name for itself with its innovative pastry ATMs, which can be found at various locations throughout the region. Some of these ATMs will be relocating to new spots, including Roxborough and Fishtown.
As a vocal advocate for people with celiac disease, Colello has become a leader in the gluten-free industry. Her journey from culinary career to baking icon is one of determination and passion. With its new Bryn Mawr location, Flakely is poised to take on an even bigger role in spreading awareness about gluten-free options and providing delicious baked goods for those with dietary restrictions.
The bakery will be open 9 a.m. to 4 p.m. Tuesdays through Saturdays, offering customers the chance to experience Colello's creations firsthand. With its commitment to quality and innovation, Flakely Gluten Free is set to continue making waves in the region's culinary scene.
